Dr. McCoy graduated summa cum laude from New York Chiropractic College and is a member of the Phi Chi Omega Honors Society. She also graduated summa cum laude and a member of the Phi Chi Omega Honors Society from the Fingerlakes School of Acupuncture and Oriental Medicine with her Masters in the Science of Acupuncture. While at NYCC she earned her Bachelors of Professional Studies.

Dr. McCoy attended Montgomery County Community College and Kutztown University of Pennsylvania prior to her matriculation to graduate school.
